The story goes that a husband came home after having a good time with another woman and demanded that his wife cook him dinner. The wife prepared it with every hot spice in the kitchen. To her chagrin, he liked it. So was born hot chicken.

Hattie's has six grades of chicken beginning with Southern (which has no spice) through mild and on up to a nuclear disaster. I had medium which is the second grade of hotness -- it burned my tongue.
