With yeast being scarce on the grocery shelves these days, I decided to try making a sourdough starter from scratch. This is Day 1! (As with all my work, constructive critique is welcome, and faves are appreciated.)

My sourdough starter experiment looks like this on Day 2 of 3. The instructions I'm using are those in "The Joy of Cooking," which claims to have developed a three-day method for a process that some recipes say should take up to two weeks. I trust this particular cookbook, so we'll see. Today the starter did rise, and you can see a few faint bubbles on the surface. (As with all my work, constructive critique is welcome, and faves are appreciated).

My sourdough starter experiment looks like this on Day 3 of 3.
You can see a few bubbles on the surface, but "The Joy of Cooking" tells me the starter should be "very bubbly" with "bubbles all over." My cookbook also tells me that I may need to keep feeding the starter every 12 hours "for 2 more days until it builds enough leavening strength to rise bread dough." So I think I'll wait. (As with all my work, constructive critique is welcome, and faves are appreciated.)

The starter is bubbling a bit more than it was, but I don't see any really significant change, so I dunno. I think I'll wait one more day before baking.
