A Beijing Roast Duck being professionally sliced up.
That's the local specialty, famous all over the world, and when visiting Beijing one should really try it. At a good restaurant it is roasted fresh, so plan for about 1 hour waiting time after ordering. Expensive it's only at tourist rip-off places.
