Looking out into the ocean. Clouds of smoke from the bushfires 20 - 30 kilometres away drifted south toward Kamay Botany Bay National Park, giving sky and water an eerie and muddy look.

Well, this is what I cooked for dinner today, (2 serves) with what was left in the fridge, with:
Vegetables:
- 2 small sweet potatoes
- 1 Zucchini
- 1 red capsicum
- fresh coriander leaves, almond splinters and lime slices for garnish.
The curry (2 serves):
- 2 gloves garlic
- fresh ginger
- a small handful of fresh coriander (I had to rush out and buy some...)
- 1 tbsp soy sauce
- 1/2 tbsp curry powder mix
- a pinch of cayenne
- a dash of lime juice
- 200 mL coconut milk
This is a delicious curry with a nice bite!
Note for next time: Don't let the curry cook so long :)

Now, I still have three sweet potatoes left, so shall make the 'old reliable' "Sweet potato & chickpea curry" tomorrow, which I have made many times before.
It is amazing what lovely and nourishing meals can be cooked with a few ingredients, including staples such as rice, pasta and potatoes.

I think I managed to capture the glow and light of the setting sun.

More camel shots! Love camels! :)
Lunch break.
This is Rodger, the lead camel in 'our' string. He carried the kitchen gear, two swags and 2 x 20 litres of Port. Towards the end of the hike, when the two jerry cans of Port were almost empty I was able to load and unload him by myself which I really enjoyed! :) Three of the camels in our string were just like big pets, nice to handle and very patient.
There was a time when I though camels were native to Australia. It did not quite make sense, but at that time I did not have any other explanation.
